Introduction:
Yibin (a city in Sichuan Province of China) is well known for producing Wuliangye (a famous Chinese liquor). There are only few local alcohol workshops still maintaining the traditional brewing technology. The productions are mainly for rural market. Under the stress of the modern brewing technology, the number of local workshops is gradually reducing.
